Turkey Gruyere Paninis and Homemade Tomato Soup

For those of you not familiar with Gruyere cheese, it is my all time favorite cheese. It’s very similar to Swiss and tastes great on sandwiches. So that’s what I did for lunch today on this lovely snow day!

First of all, I am using a panini press.


If you don’t have one, that’s okay, just use a pan and follow the directions like your making a grilled cheese.

Heat up your panini press to medium heat.  Start with 2 tablespoons of softened butter. That’s enough butter for about two sandwiches depending on the size of bread.  Stir in a bit of your favorite herbs.  You only need a sprinkle!


Mmmm. Butter.

Spread the butter on one side each of two pieces of bread. I went a little crazy with the pictures so now you get step-by-step photos!

Pile on some turkey.

And a couple slices of that delectable Gruyere cheese. Gruyere is usually found in the fancy cheese section of your grocery store, although just some Swiss would still be delicious.


Next, put it on the hot panini press, buttered sides outwards, and gently press it down for about ten seconds.

After about 5-7 minutes, it will be golden and crispy.

Does that look heavenly or what?
